If you want to make an omelet or crepe, stainless frying pan is not the best choice as food may stick to bottom. Solution is to use little oil or butter when cooking on steel pan or use nonstick or anodized frying pan for making omelet is good suggestion.
Stainless material is not a good heat conductor, meaning pot may not cook food evenly or retain heat well throughout the cooking. Solution to get better heat conductivity is to buy stainless material with copper or aluminum core in between steel coating. Aluminum and copper are better heat conductor and buying a clad or triple ply stainless material with aluminum or copper core which will give your pan a good heat conductivity and will cook food evenly.
